Eat as lunch or dinner. These vegetables are extremely easy to prepare! 🙂 You can always substitute some of them with others, according to your taste. If you are really hungry, you can add avocado with lemon juice, a slice of whole-wheat bread or 100 g white fish.



  • 1 red onion
  • 2 carrots
  • 1 tomato or 6-7 cherry tomatoes
  • 1/2 zucchini
  • 1/2 red pepper
  • 1/2 green pepper
  • 5-6 mushrooms
  • 1/3 broccoli stalk
  • 1 small handful cauliflower
  • 3-4 garlic cloves
  • olive oil



  • yam
  • black pepper



Clean/wash and chop the vegetables. Arrange on a baking dish covered with a parchment paper. Put the garlic cloves between the vegetables and sprinkle with a little olive oil. Preheat the oven to 160 C (320 F). Cook for about 45 minutes or until the vegetables are ready. If you put a foil over the dish, cook for 30 minutes, then remove the foil and continue cooking for 15 more minutes. Enjoy! 🙂
